Day 3: Blueberry Coconut Oatmeal Cookies

Blueberry Coconut Oatmeal Cookies

A playful twist on the classic oatmeal cookie. Add some blueberries and coconut for some extra depth of flavor and texture!

Ingredients
¾ cup soft butter
1 cup firmly packed brown sugar
½ cup granulated sugar
1 egg
¼ cup water
1 teaspoon vanilla
1 cup sifted all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
3 cups oats
1½ cups dried blueberries
1½ cups sweetened shredded coconut

Instructions
Preheat oven: 350 degrees

Beat shortening, sugars, egg, water and vanilla together until creamy.
Stir together flour, salt, and soda; add to creamed mixture, blend well.
Stir in oats, blueberries, and coconut.

Drop by teaspoonfuls onto greased cookie sheets. Bake in preheated oven for 12-15 minutes.
